Gutenberg blocks or posts or hybrid?

So I got a large collection of testimonials, each with its characteristic fields (Name, Date, Star count and text). A post can model these quite well with its title, published date, ACF start field and author name field (because creating a real WordPress user as author for each testimonial would be insane).
However, now that I am embracing the new Gutenberg block editor as much as possible, I thought about inserting all these testimonials as block.
On the other hand, having a clean post archive in WordPress has its advantages, including sorting + pagination features.
Can I get the best of both worlds? Post features and blocks? Can I insert these posts as block list in Gutenberg? Or link a Gutenberg block to a post so it can be edited in WordPress post editor and as Gutenberg block?
