When we make changes to the theme.json file it keeps reverting back to its original state after a few minutes?
Does anybody know why this happends?

That’s most likely because the build process in Sage (Bud) overwrites theme.json each time there’s an update (see here)
If you’re going to be editing the file manually, you should disable the .wpjson section of your bud.config.mjs file
