Different plugins for different stages?

Is it possible for Composer to maintain a WordPress plugin on one stage but exclude it from others?

If so, what’s the best way to do that?

A good use case, and the one I have in mind, is to use the plugin and workflow described in http://gladdy.uk/blog/2014/04/13/using-uncss-and-grunt-uncss-with-wordpress/ to reduce my stylesheet to the bare minimum on my development stage, but obviously that’s unnecessary on my production stage.
