Does 'soil-disable-asset-versioning' hurt anything?

Are there any downsides to removing asset versioning from URLs via the Soil plugin? It looks like the correct assets are loaded regardless of what the URL looks like. Will it create any future conflicts?

Why did WP create asset versioning in the first place? Will that reasoning still work when the version is remove from the URL?

No, the assets wouldn’t be cache busted if they were updated. Depending on your caching setup, this could affect users that have previously visited your site and would prevent them from seeing the latest version of whatever assets got updated.
