Stripe Payment Gateway WordPress Plugin - not storing API keys

Hi, we have a WordPress multisite using roots/Bedrock with WooCommerce and Stripe Payment Gateway plugins installed, and the Stripe Payment Gateway plugin does not store the Stripe payment API keys - “Error saving account keys”.

We created a standard Valet WordPress project without using roots/Bedrock (for testing purposes) and the API keys were stored within the Stripe Payment Gateway plugin.

I have spoken with Stripe and they confirmed there should be no issues from their side, and as I previously said the Stripe plugin did store the keys on a standard WordPress project - issue only with Bedrock build.

Does anyone have any ideas/possible solutions to resolve this issue?
