Does it make sense to update the site salts often?
Not really. I’d think you should only refresh them if you know they were leaked. Otherwise it just invalidates every session.

You’d want to use https://github.com/aaemnnosttv/wp-cli-dotenv-command#regenerate anyway, as mentioned in the Bedrock README.
